Ethiopia Yirgacheffe Wush Wush Anaerobic
Wush Wush is an heirloom variety named after a small village in Ethiopia’s Keffa region. As its reputation has grown in the specialty coffee world, farmers in the other areas of Ethiopia have begun cultivating it. This variety is prized for its bright acidity, natural sweetness, and intensely juicy character. This particular lot comes from Yirgacheffe and was produced by renowned Ethiopian coffee veteran Israel Degafa. Known for his innovative approach and meticulous attention to quality, Israel and his team pushed this microlot to the next level with a carefully controlled fermentation designed to amplify fruit expression and complexity.
The result is a vibrant, fruit-forward cup with crisp acidity and a dry, wine-like finish. It’s silky and smooth on the palate, well-balanced, and surprisingly clean given its intensity. In the cup, we find a strawberry-and-banana smoothie vibe alongside juicy blackberry, bright lemonade, and subtle sugar cane sweetness. The finish is reminiscent of an elegant white wine—dry yet smooth, crisp but not sharp.
